Okay, back from the grocery. Bought myself some pre made hamburger
patties which makes it easy to toss in the pan. So I have meat in my
system and feel much perkier. :)
Just wanted to say that I bought the sugar free Cherry Jell-O to add to
my stash. Eating a lot of that stuff mixed with soda instead of water.
It makes it yummy. Anyway, when looking for the Raspberry soda for my
Raspberry Jell-O, I tripped over WW's diet black cherry soda. I stuck
the can in my freezer [popped top first] to chill while I ate meat.
Then, I made the cherry Jell-O and then drank what was left over. OH
MY!! now that was good. Going to get more of that to just have. I also
bought some orange for orange Jell-O so hope it is as good.

We made the Cauliflower mashed 'potatoes' a couple of days ago and the
half and half we had in the house had turned so John used the skim milk.
Let's just say that creamy they were not. I could feel the little
pebbles that is the cauliflower and not so good. Did find the Land o
Lakes half and half so hoping that it makes a huge difference for the
next time. Anyone try that yet?

That quiche idea sounds good. So what kind of pan do I use. I have a
tart pan. Would that do?

2 eggs
1/2 cup baby spinach
2 tablespoons nonfat milk or soymilk
pinch salt and black pepper
1 tomato slice (optional)
Beat eggs and milk, salt and pepper together in a microwave-safe bowl. Stir
in spinach. (If using large spinach leaves, remove the stems.) Microwave on
high for 2-3 minutes or until completely set. Loosen from bowl with fork and
serve with tomato or dash of hot sauce.
Quiche - I'd just use a pyrex pie plate. But a tart pan should be great.
We love the Fat Free half and half.
The soda Jello sounds great. Got the Jello, Gotta get the soda
(Sitting here sucking on my caffeine free diet coke)

A regular pie pan works fine, metal or pyrex (or foil, if you want to
save washing it afterwards).

we do quichelettes. just pop a silver cupcake holder/tin thingy into a
muffin pan. then you have 12 little quiches you can freeze and pop in
the micro when your ready for them.

I just pop them out of the wrapper and nuke them...they hold up fine.
Another option is to use egg beaters if you want to cut out the egg...then
the sky is the limit as to what you can put in them!!
