OK Made it thru one day.  Charlie figured something was going on when the
books I ordered got here.  Told him a bit about how it works, and that I
will pretty much be cooking what I can eat but he can eat whatever he wants.

When I finally got up this morning (bad night) he was just finishing up
cleaning the kitchen counters.  I didn't have the heart to make a mess.  I'd
planned on eggs Florentine for breakfast but don't like to cook eggs in the
microwave.  Too hard to get whatever they are cooked in clean.

But one thing we did when the grandkids started spending so much
time here was to start stocking paper plates and plastic spoons.  Then
disposable plastic
glasses. (The short clear ones are great for pudding or Jell-O).  And
recently Dixie brand paper bowls.  So I sprayed a paper bowl with cooking
spray, stirred up two eggs and a little milk, salt and pepper, added a
handful of prewashed baby spinach and put it in the microwave.  I stirred it
a bit after a minute and after two minutes and at three minutes it was puffy
and wonderful.  I added a little string cheese on top since I'd already
slept through morning snack time.  No dishes to wash and no mess on the
counter.  Next time I'll chop the spinach up a little bit though.

2 eggs
1/2 cup baby spinach
2 tablespoons nonfat milk or soymilk
pinch salt and black pepper
1 tomato slice (optional)

Beat eggs and milk, salt and pepper together in a microwave-safe bowl. Stir
in spinach. (If using large spinach leaves, remove the stems.) Microwave on
high for 2-3 minutes or until completely set. Loosen from bowl with fork and
serve with tomato or dash of hot sauce.

Just finished day 2, but had a tiring day so we ordered Chinese food. Didn't
have any rice or noodles. Had Beef and broccoli, some of Doug's chicken and
cashews and some of Rebecca's Moo shi chicken w/out the pancakes. Not great,
but not as bad as I usually am with Chinese food; It's the first time I've
skipped having egg rolls.

Jo,

Wanted to thank you for the tip you gave earlier this week.   I just
ordered my book and the accompanying cook book from Wal-Mart as well.
Saves me the time of running around looking for it.   I often forget
about Wal Mart.

The taller plastic glasses work great for cereal in the morning when the kids
wanna eat their breakfast on the porch. I use alot of plastic and paper too -
four boys eating all day long dirty far too many dishes for me to keep up with
;)

Thanks for the tip on the eggs Jo - I'm going to try it tonite for dinner.

You know how much the plastic helps too then.  As it is were lucky if we
only need to run the dishwasher once a day.  The boys figured out the cereal
in a glass thing.  Also doesn't spill as easy as a bowl.  I still seem to
spend my life making sure the real forks and spoons stay in the house and
out of the trash.

LOL - I *am* the dishwasher around here so any way I can cut down on scrubbing
time, I take. We use plastic silverware too when we can, sometimes I wash it
and reuse it - sometimes it goes in the trash. Depends on how much other stuff
is sitting in the sink waiting to be washed.

I'm scared to admit there are only 3 of us and I use as much plastic and paper
as possible.

We run our dishwasher once a week.

I completely understand.  When the kids are away we have started the typical
retiree behavior.  It will be around 5pm and there is food in the
refrigerator but the kitchen is clean.  Plenty of times we go out to eat not
because we really want  a meal out, or even to avoid cooking.  But it beats
having to clean up the kitchen again.
